It seems like gone are the days when hen parties were all about plastic willy’s and dressing up in loo roll (such a lie, I went to one such hen this summer!). But Sophie’s hen was a very chic exception to this general rule, and so invited me to cook for her friends and loved ones in Henley, for a very special pre-wedding feast.
So, after a few calls to discuss dietaries and some of her fave ingredients and cuisines, I started devising a menu that was light and healthy enough to accommodate said chic-ness, but also filling enough to soak up the multiple bottles of natural wines on order.
On the day, I arrived at the venue (a beautiful country house) at 11am, and started the creative process - easily working around the bride to be and her 13 guests.
Menu
Indian spiced roasted aubergine on minted yoghurt with garlic crisps, crunchy capers and pickled shallots
Scallops (vg. cauliflower) with celeriac purée, roasted hazelnuts and fresh apple
Sea bass (vg. miso glazed aubergine) on shredded veg salad with yellow curry and peanuts
Mini wild mushroom and pumpkin tartlet with venison (vg. portobello mushroom steak) and a port sauce
Coconut milk, cardamom and vanilla panna cotta with fresh and caramelised pineapple, passion fruit and pistachios
Absolutely loved cooking for these super fun women (and one gorgeous man!), and having clients so that were so enthusiastic and engaged in the dishes I was serving.
